What if we told you that you can make, from your home and with the Xiaomi Mi Smart Air Fryer 3.5 '', some squid that is on par with the best you can eat in Plaza Mayor? Without any fryer or oil at 190º.
You can and the results have surprised us. Let us not forget, however, that the authentic Madrid squid sandwich, popular in the city with the arrival of the railway towards the end of the 19th century, is only coated in flour, Andalusian style , since this dish genuinely comes from Andalusian coasts. Curiously, this formula is the one that best fits the air fryer, since any other batter —with egg or tempura— tends to be softer and less consistent.
The only secret is in the quality of the squid . Of course, you can make this dish with black squid (todarodes sagittatus), blond squid (illex coindetii) or the famous Argentine white squid, much cheaper. But our advice is to bet, as far as possible, on fresh squid. Now yes, to the mess.
Ingredients and preparation

Ingredients for 2 people:
- 300 gr of fresh squid, cleaned and cut into thick rings. If you want you can also include the tentacles and other parts of the squid.
- 100 gr of special flour for coating, sifted to avoid lumps.
- Salt to taste
Squid and flour. So simple, so magical . If you want to give them a special touch you can sprinkle some freshly ground black pepper or flavor with cloves. We have opted for the traditional.

One of the keys is to properly wash and dry the squid, with kitchen paper. Not in vain, in the recipe available within the Xiaomi Home application it is recommended, first of all, to blanch the squid rings in white wine, so that we can leave them slightly precooked, softened and dry . We have circumvented this step by preheating at 200ºC for 5 minutes.

Second, the recipe recommends using a batter of egg and breadcrumbs. However, in our tests we have found that part of this shawl flies away with the air circulation.

You can also opt for a sweet batter based on a beaten egg (Roman style), a pinch of salt and sugar, chemical yeast and batter flour beaten with water or soda (carbonated water). You can opt for this formula but the results are not so satisfactory.

The process is very simple: once dry, coat each ring with plenty of flour , inside and out. Shake them a little to remove excess flour and place them inside the basket of the Xiaomi Mi Smart Air Fryer . It is essential to avoid that they are mounted on top of each other. If you stack several layers, the squid will be caked and soft.
Do not miss either, the oil spray to add a few drops on top and achieve a more crispy effect . If you already have the air fryer preheated and ready, choose the predefined program or manually edit the following settings:
- Cooking time: 15 minutes
- Temperature: 180ºC , without forgetting the extra 5 minutes of preheating

Important: after the first 10 minutes, open the basket with its respective handle to check how the batter is going and carefully move, with tweezers, those squid that are softer. Spray again with the spray oil if needed, in order to achieve a crunchier texture.
With the temperature of the hot air, it is logical that the squid shrinks a little and, with it, part of the rebozo is slightly unglued. In aesthetic terms, the squids will not look as attractive as the pre-battered ones; the flavor, however, is up to scratch and perfectly rivals a rebozo in oil.

For the platter you can accompany the squid with some lemon wedges. Some people prefer a homemade mayonnaise or a little ali oli . They are all good solutions. Of course, do not forget to clean your fryer afterwards!
