As you can see in the image, in our recipe we have avoided additional salt, beyond that provided by the pecorino itself, which is slightly fatty.   • 30gr of pine nuts (not toasted)
  • 2 garlic cloves, peeled
  • 100 grams of pecorino cheese
  • 80 gr of extra virgin olive oil, We have also avoided dry spices and oil in the preparation.

How to make homemade pesto sauce


Although you can make a sachet pesto and save time and money – a sugary pesto, crammed with additives, it should be noted – for our recipe we have chosen to make it homemade. It's easy and fast.

You just have to put 2 previously peeled garlic cloves , the washed basil leaves, the pine nuts and a glass of olive oil in the blender jar.

On the other hand, about 100-120 grams of the cheese are grated - very fine, until almost ground , as Parmesan is usually marketed. Once beaten, add the cheese and mix until a uniform texture is achieved. And voila, homemade pesto sauce.

The result is usually somewhat irregular, with several noodles stuck together, but it is worth trying and stirring with a wooden spoon. For this you only need:

  3. Move to the beginning, put the basket back and let it continue cooking at the same temperature. After five minutes, stir it again and let it cook another 3-4 minutes extra .
  4. When the pasta is al dente, take it out of the basket and let it drain without washing it, stirring it with the same spoon in the same way.

On the one hand, we will poach the asparagus already thawed and split, the prawns and the garlic, previously peeled and sliced. Don't forget to spray a couple of times with spray oil . Of course, the prawns, despite being thawed and drained, release a lot of water. The resulting juice can be reduced and then added. Together with the pesto sauce you will get a very juicy texture.

  • Cooking time: 14 minutes (stir a couple of times during the process and, if you think it necessary, add 2 minutes of pre-heating).
  • Temperature: 180ºC

If you like it spicy you can add two cayenne peppers without seeds and to sweeten even more you can use 1 dessert spoon of sweet paprika, sprinkled . It is totally optional but you will be able to evoke a very subtle and pleasant touch of pepperoncini. Don't forget to remove the cayenne peppers afterwards!
